Here's a simple and authentic way to cook a Moroccan tagine:


*Ingredients:*

- 1 kg meat (lamb, chicken, or beef)

- 2 onions, finely chopped

- 3 cloves garlic, minced

- 2 tbsp olive oil

- 1 tsp ground ginger

- 1 tsp ground cumin

- 1 tsp turmeric or saffron

- 1 tsp cinnamon

- Salt and pepper to taste

- 2 cups water or broth

- 2 carrots, cut into chunks

- 1 potato, cut into chunks (optional)

- 1 handful dried apricots or prunes (optional)

- Fresh cilantro and parsley, chopped



*Cooking Steps:*


1. *Heat olive oil* in a tagine pot or heavy-bottomed pan over medium heat.

2. *Add onions and garlic*, sauté until soft and fragrant.

3. *Add meat*, and brown it on all sides.

4. *Sprinkle spices* (ginger, cumin, turmeric, cinnamon, salt, pepper) over the meat and stir well to coat.

5. *Add water or broth*, cover the pot with the tagine lid or a tight-fitting lid.

6. *Simmer gently* for about 1.5 to 2 hours, until the meat is tender.

7. *Add vegetables* like carrots, potatoes, and dried fruits about halfway through cooking.

8. *Garnish* with chopped cilantro and parsley before serving.
